- 1 pre-baked pie crust
- 1 cup fresh orange juice
- Zest of 1 orange
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 cups water
- 2 tablespoons butter
- 4 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine orange juice, orange zest, sugar, cornstarch, and salt. Gradually whisk in water until well combined.
- Bring to a boil over medium heat, stirring constantly until thickened and translucent. Temper the egg yolks by adding a small amount of the hot mixture while whisking, then return to the saucepan and cook for another minute. Stir in butter until melted, then pour into the pre-baked pie crust.
- In a separate bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar, continuing to beat until stiff peaks form. Spread meringue over the orange filling, sealing the edges to prevent shrinking. Bake for 10-15 minutes, until meringue is golden brown. Cool before serving.
Notes
For added flavor, consider incorporating a little lemon juice with the orange juice. Serve chilled or at room temperature, optionally garnished with orange zest or mint leaves.
