Description

This overnight croissant breakfast casserole bakes into a golden, custardy dish that is perfect for comfort breakfasts. Croissant pieces soak in a savory egg custard and bake with cheese and sausage or bacon, served warm with gravy.

  • 4 croissants, torn into pieces
  • 6 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked sausage or bacon, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup prepared gravy (for serving)

Instructions

  1. Grease a 9×13-inch baking dish. Spread the torn croissant pieces in an even layer in the dish so they will absorb the custard evenly.
  2. In a bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until smooth and slightly frothy. Pour the egg mixture evenly over the croissant pieces. Sprinkle cheese and cooked, crumbled sausage or bacon over the top.
  3. Cover the dish tightly and refrigerate overnight (or at least 4 hours) to let the croissants soak. In the morning, preheat the oven to 350°F (175°C). Uncover and bake for 30–35 minutes or until the top is golden and the center is set.
  4. Let the casserole rest 5 minutes after removing it from the oven. Spoon warm gravy over slices before serving.

Notes

For the best texture, use slightly stale croissants. Ensure not to overfill with custard. Let the casserole rest before slicing to avoid a runny center.
