Ingredients

- 1 cup rolled oats
- 1 cup milk (or dairy-free alternative)
- 1/2 cup Greek yogurt (optional)
- 1/2 cup raspberries
- 2 tablespoons chia seeds
- 1 tablespoon maple syrup or honey (optional)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a jar or bowl, combine rolled oats, milk, Greek yogurt (if using), chia seeds, maple syrup, vanilla extract, and salt. Stir well to combine.
- Gently fold in the raspberries to keep them somewhat whole.
- Cover and refrigerate overnight (or at least 4 hours) to thicken.
- In the morning, stir the mixture and add more milk for a looser consistency, if desired. Taste and adjust sweetness, then enjoy cold.
Notes
Store in an airtight container in the fridge for up to 4 days. If thickened too much, stir in milk before serving.
