Description

A quick and flavorful pan seared steak with a rich garlic butter sauce, perfect for a special dinner at home.


Ingredients

  • 2 ribeye steaks (or your preferred cut)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Fresh herbs (such as rosemary or thyme), optional

Instructions

  1. Remove the steaks from the fridge and let them come to room temperature for about 30 minutes. Pat them dry with paper towels — dry meat sears better. Lightly rub both sides with olive oil, then season generously with salt and pepper.
  2. Mince the garlic and have the butter measured and ready. If using fresh herbs, tie sprigs together or have them ready to add to the pan.
  3. Heat the olive oil in a cast-iron skillet over high heat until it just begins to smoke. Add the steaks and sear without moving for 4–5 minutes on the first side. Flip and sear the other side for another 4–5 minutes for medium-rare, adjusting time for your preferred doneness. In the last 1–2 minutes, lower the heat slightly and add the butter, minced garlic, and herbs. Baste the steaks with the melted garlic butter.
  4. Once cooked to your liking, remove the steaks from the skillet and let them rest for 5–10 minutes to allow the juices to redistribute.

Notes

For a flavorful twist, add a pinch of crushed red pepper flakes to the butter while basting.
