Description

Bright, silky, and full of tropical tang, this passionfruit curd balances sweet and tart with a creamy texture, perfect for tarts, toast, or yogurt.


Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup fresh passionfruit juice
  • 1/4 cup unsalted butter, cut into pieces
  • Pinch of salt

Instructions

  1. In a medium saucepan, whisk together the eggs, sugar, passionfruit juice, and salt until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10–15 minutes).
  3. Remove from heat and stir in the butter until melted and smooth.
  4. Strain the mixture through a fine-mesh sieve into a bowl to remove any solids or seeds. Let cool before using.

Notes

Store in the refrigerator for up to 1 week or freeze for 3 months. Always cool completely before sealing to avoid condensation.
