- 1 sheet of puff pastry
- 2–3 ripe peaches, sliced
- 1/4 cup almond flour or ground almonds
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 egg (for egg wash)
- Sliced almonds (for topping)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and transfer it to a baking sheet.
- Spread almond flour evenly over the pastry surface.
- Arrange peach slices on top of the almond flour, overlapping them slightly.
- Sprinkle granulated sugar and drizzle vanilla extract over the peach slices.
- Fold the edges of the pastry over the filling to create a border.
- Brush the edges with beaten egg for a golden color.
- Scatter sliced almonds on top for added crunch.
- Bake for 25-30 minutes, until the pastry is golden brown.
- Allow to cool slightly before dusting with powdered sugar, if desired.
