Description

These Peanut Butter Guava Muffins combine creamy peanut butter with tropical guava for a moist and tender treat, perfect for breakfast or snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup peanut butter
  • 1/2 cup guava puree
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt. Whisk briefly to break up lumps.
  3. In another bowl, combine the peanut butter, guava puree, sugar, milk, egg, and vanilla extract. Stir until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the tin for a few minutes, then transfer to a wire rack.
