- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 6 cups vegetable or chicken broth
- 1 cup green lentils, rinsed
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 cup fresh herbs (parsley, cilantro, and dill), chopped
- 1 cup noodles (egg noodles or any preferred type)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they become translucent and fragrant, about 5 minutes.
- Stir in the lentils, turmeric, and cumin; cook for another 2 minutes to allow the spices to bloom and infuse the lentils with flavor.
- Pour in the broth and bring the mixture to a boil. Reduce heat and let it simmer for about 30 minutes, or until the lentils are tender and cooked through.
- Add the noodles and cook according to package instructions. After the noodles are ready, stir in the fresh herbs and season with salt and pepper to taste. Serve hot, garnished with lemon wedges for a zesty finish.
Notes
For added flavor, consider using homemade broth instead of store-bought. Garnishing with a dollop of yogurt can add creaminess and a tangy flavor.
