- 1/2 cup tahini
- 1/4 cup pickle juice
- 1/2 cup pickles, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
Instructions
- In a food processor, combine the chickpeas, tahini, pickle juice, pickles, garlic, and lemon juice.
- Blend the mixture until smooth, gradually adding olive oil to enhance creaminess.
- Season with salt and black pepper to taste, adjusting according to preference.
- If too thick, add additional pickle juice or olive oil until desired consistency is reached.
Notes
Leftover hummus can be stored in an airtight container in the refrigerator for up to 4 days. Adjust thickness with a splash of water or pickle juice when served again.
