Description

A unique twist on a classic favorite, this Pickle Lovers Hummus combines creamy hummus with the tangy punch of pickles for a delightful snack.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup tahini
  • 1/4 cup pickle juice
  • 1/2 cup pickles, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice

Instructions

  1. In a food processor, combine the chickpeas, tahini, pickle juice, pickles, garlic, and lemon juice.
  2. Blend the mixture until smooth, gradually adding olive oil to enhance creaminess.
  3. Season with salt and black pepper to taste, adjusting according to preference.
  4. If too thick, add additional pickle juice or olive oil until desired consistency is reached.

Notes

Leftover hummus can be stored in an airtight container in the refrigerator for up to 4 days. Adjust thickness with a splash of water or pickle juice when served again.
