Ingredients

  • 1 cup pistachio nuts, shelled
  • 1 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup corn syrup
  • 1/4 cup butter
  • 1/2 teaspoon vanilla extract
  • Chocolate eggs or candy for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine sugar, corn syrup, and butter over medium heat. Stir until the mixture boils and is fully combined.
  3. Remove from heat and stir in vanilla extract, shredded coconut, and shelled pistachios until well-coated.
  4. Spoon small amounts of the mixture onto the lined baking sheet, shaping into nests with a depression in the middle. Bake for 10-12 minutes or until golden brown. Let cool before adding chocolate eggs.

Notes

Chop pistachios into smaller pieces for better texture. Substitute chocolate eggs with jellybeans for a fun twist. Store in an airtight container for up to a week.
