- 1 cup shredded coconut
- 1/2 cup granulated sugar
- 1/4 cup corn syrup
- 1/4 cup butter
- 1/2 teaspoon vanilla extract
- Chocolate eggs or candy for decoration
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan, combine sugar, corn syrup, and butter over medium heat. Stir until the mixture boils and is fully combined.
- Remove from heat and stir in vanilla extract, shredded coconut, and shelled pistachios until well-coated.
- Spoon small amounts of the mixture onto the lined baking sheet, shaping into nests with a depression in the middle. Bake for 10-12 minutes or until golden brown. Let cool before adding chocolate eggs.
Notes
Chop pistachios into smaller pieces for better texture. Substitute chocolate eggs with jellybeans for a fun twist. Store in an airtight container for up to a week.
