- 2 large egg whites

Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a bowl, combine shredded coconut, powdered sugar, chopped pistachios, and salt; stir until mixed.
- In another bowl, whisk egg whites and vanilla extract until frothy. Fold into the coconut mixture.
- Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them out.
- Bake for 20-25 minutes, until tops are lightly golden. Cool on the baking sheet before transferring to a wire rack.
