Delightful treats combining sweet shredded coconut and crunchy pistachios, perfect for any occasion.


Ingredients

  • 2 cups shredded coconut
  • 1 cup powdered sugar
  • 1/2 cup chopped pistachios
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine shredded coconut, powdered sugar, chopped pistachios, and salt; stir until mixed.
  3. In another bowl, whisk egg whites and vanilla extract until frothy. Fold into the coconut mixture.
  4. Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them out.
  5. Bake for 20-25 minutes, until tops are lightly golden. Cool on the baking sheet before transferring to a wire rack.
