Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the pistachio pudding mix, milk, vegetable oil, and eggs, whisking until well blended.
- In another bowl, whisk together all-purpose flour, baking powder, salt, and sugar.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in vanilla extract and chopped pistachios if using.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
