  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pistachios (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the pistachio pudding mix, milk, vegetable oil, and eggs, whisking until well blended.
  3. In another bowl, whisk together all-purpose flour, baking powder, salt, and sugar.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in vanilla extract and chopped pistachios if using.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
