Description

Delicious pizza flavors packed into colorful bell peppers, filled with rice, marinara, mozzarella, and pepperoni for a fun, family-friendly meal.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the peppers and pat them dry.
  2. In a bowl, mix the cooked rice, marinara sauce, mozzarella cheese, pepperoni, Italian seasoning, salt, and pepper until well combined.
  3. Stuff the mixture into each bell pepper, pressing gently. Place the stuffed peppers upright in a baking dish. Cover with foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is bubbly and lightly browned.
  5. Let cool for a few minutes before serving. Garnish as desired.

Notes

Serve with a salad and crusty bread. Leftovers can be refrigerated for up to 3-4 days or frozen for up to 2 months.
