Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 pound beef sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3–4 minutes.
  2. Add the sliced beef sausage and cook until browned, about 5–7 minutes.
  3. Stir in the diced potatoes and pour in 4 cups chicken broth. Bring to a boil, then simmer for 15–20 minutes, until the potatoes are tender.
  4. Add 1 cup milk and 1 cup heavy cream, warming gently without boiling. Season with salt and pepper, and serve topped with chopped parsley.

Notes

For a creamier texture, use starchy potatoes like Russets. Brown the sausage well for deep flavor. Serve with crusty bread or oyster crackers.
