A delightful fall dessert combining pumpkin and apples with warm spices.
Ingredients

- 1 cup canned pumpkin
- 1 cup applesauce
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the pumpkin, applesauce, sugar, oil, and eggs until smooth.
- In another bowl, combine the flour, baking powder, baking soda, spices, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chopped nuts and raisins if using.
- Pour the batter into the prepared baking pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Allow the cake to cool before transferring to a wire rack to cool completely.
Notes
Serve warm or at room temperature with vanilla ice cream or whipped cream. Drizzle with caramel for extra flavor.
