Description

A delightful fall dessert combining pumpkin and apples with warm spices.


Ingredients

  • 1 cup canned pumpkin
  • 1 cup applesauce
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the pumpkin, applesauce, sugar, oil, and eggs until smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, spices, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped nuts and raisins if using.
  6. Pour the batter into the prepared baking pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream. Drizzle with caramel for extra flavor.
