Description

A delightful dish that combines savory bacon and rich caramelized onions with creamy pumpkin puree for a comforting fall meal.


Ingredients

  • 8 oz pasta
  • 1 cup pumpkin puree
  • 4 slices bacon, chopped
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil
  • Fresh sage leaves (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside, reserving a small amount of pasta water if needed.
  2. In a large skillet over medium heat, heat a splash of olive oil. Add chopped bacon and cook until crispy, around 5-7 minutes. Remove bacon and drain on paper towels, leaving the fat in the skillet.
  3. Add sliced onion to the skillet and sauté for about 10-15 minutes until golden brown. Stir in minced garlic and cook for another minute.
  4. Stir in pumpkin puree and heavy cream, season with salt and pepper. Simmer for 2-3 minutes. Add cooked pasta, tossing to coat. Mix in bacon and Parmesan cheese until well combined.
  5. Serve hot, garnished with fresh sage leaves if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
