- 8 oz pasta
- 1 cup pumpkin puree
- 4 slices bacon, chopped
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
- Fresh sage leaves (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside, reserving a small amount of pasta water if needed.
- In a large skillet over medium heat, heat a splash of olive oil. Add chopped bacon and cook until crispy, around 5-7 minutes. Remove bacon and drain on paper towels, leaving the fat in the skillet.
- Add sliced onion to the skillet and sauté for about 10-15 minutes until golden brown. Stir in minced garlic and cook for another minute.
- Stir in pumpkin puree and heavy cream, season with salt and pepper. Simmer for 2-3 minutes. Add cooked pasta, tossing to coat. Mix in bacon and Parmesan cheese until well combined.
- Serve hot, garnished with fresh sage leaves if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
