Description

Ingredients

  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, mix the milk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of batter for each pancake and cook until bubbles form, then flip and cook until golden brown.

Notes

For extra fluffiness, let your batter rest for 5 minutes before cooking. Customize with add-ins like chocolate chips or chopped nuts.
