- 2 medium sweet potatoes, diced

- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and garlic to the skillet, sautéing until softened and fragrant, about 2-3 minutes.
- Add ground turkey to the skillet and cook until browned, breaking it apart with a spatula as it cooks.
- Stir in the diced sweet potatoes and bell pepper, seasoning with paprika, cumin, salt, and pepper. Mix thoroughly to combine.
- Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Remove from heat, garnish with fresh parsley, and serve warm.
