Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and garlic to the skillet, sautéing until softened and fragrant, about 2-3 minutes.
  3. Add ground turkey to the skillet and cook until browned, breaking it apart with a spatula as it cooks.
  4. Stir in the diced sweet potatoes and bell pepper, seasoning with paprika, cumin, salt, and pepper. Mix thoroughly to combine.
  5. Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Remove from heat, garnish with fresh parsley, and serve warm.
