Quick Florentines are delightful biscuits combining dried fruits, nuts, and rich dark chocolate, perfect for any occasion and easy to make.
Ingredients

- 100g mixed dried fruit (raisins, apricots, cherries)
- 100g nuts (almonds, hazelnuts)
- 100g dark chocolate
- 100g sugar
- 100g butter
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon flour
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Melt the butter, sugar, and honey in a saucepan over medium heat, stirring until smooth.
- Remove from heat and add mixed dried fruit, nuts, vanilla extract, and flour. Stir until combined.
- Drop spoonfuls onto the prepared baking tray, spacing them an inch apart.
- Bake for 10-12 minutes or until golden brown. Allow to cool on tray.
- Melt dark chocolate and dip the bottoms of the cooled Florentines, then let set on a rack.
Notes
Store in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
