- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1/4 cup water
Instructions
- Hull and slice the strawberries into even pieces. Measure sugar, lemon juice, cornstarch, and water.
- Combine strawberries, sugar, and lemon juice in a medium saucepan. Let them sit to macerate.
- Heat over medium heat until bubbly. Prepare cornstarch slurry and add to the bubbling mixture, stirring constantly until thick.
- Remove from heat and let cool to room temperature. Pulse for a smoother texture if desired.

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
