- 1 cup fresh or frozen raspberries
- 1 cup coconut milk
- 1 cup pineapple juice
- 1/2 cup rum (optional)
- 1 tablespoon honey or sugar (optional)
- Ice cubes
- Fresh raspberries and pineapple slices for garnish
Instructions
- Prepare all ingredients. If using fresh raspberries, rinse and drain. For a thicker drink, use frozen raspberries or freeze them briefly.
- In a blender, combine the raspberries, coconut milk, pineapple juice, and rum (if using). Add honey or sugar if desired.
- Blend on high until smooth. Adjust sweetness and rum to taste.
- Add ice cubes and blend again until slushy. Pour into chilled glasses, garnish, and serve immediately.
Notes
Best served fresh; refrigerate leftovers in an airtight container up to 24 hours. Re-blend with ice before serving to restore texture.
