Description

Tender and slightly tangy red velvet mini loaves perfect for a small, elegant treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease four mini loaf pans and dust with flour or line with parchment.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Divide the batter evenly among the prepared mini loaf pans and smooth the tops.
  6. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

Notes

For a special touch, serve slices dusted with powdered sugar or topped with cream cheese frosting.
