- 1/2 cup chopped pistachios
- 1/4 cup honey
- 1 teaspoon vanilla extract

- Pistachio crumbs for rolling (optional)
Instructions
- Measure the ricotta, chop the pistachios if not already chopped, and line a small plate or tray with parchment for chilling.
- Combine the ricotta cheese, chopped pistachios, honey, vanilla extract, and salt in a bowl.
- Mix until the ingredients are evenly distributed and slightly sticky.
- Shape the mixture into small balls (about 1 inch) using clean hands or a small cookie scoop.
- Roll in additional pistachio crumbs if desired, and place on the prepared tray.
- Refrigerate for at least 30 minutes to firm up before serving.
