Description

These no-bake treats combine creamy ricotta, crunchy pistachios, and floral honey for a delightful bite-sized snack or dessert.


Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup chopped pistachios
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Pistachio crumbs for rolling (optional)

Instructions

  1. Measure the ricotta, chop the pistachios if not already chopped, and line a small plate or tray with parchment for chilling.
  2. Combine the ricotta cheese, chopped pistachios, honey, vanilla extract, and salt in a bowl.
  3. Mix until the ingredients are evenly distributed and slightly sticky.
  4. Shape the mixture into small balls (about 1 inch) using clean hands or a small cookie scoop.
  5. Roll in additional pistachio crumbs if desired, and place on the prepared tray.
  6. Refrigerate for at least 30 minutes to firm up before serving.
