Ingredients

  • 2 cups fresh breadcrumbs

Instructions

  1. Preheat the oven to 400°F (200°C). Rub the leg of lamb generously with olive oil, seasoning well with salt and pepper.
  2. Place the lamb in a roasting pan and roast for about 1 hour for medium-rare, monitoring the internal temperature.
  3. In a bowl, combine fresh breadcrumbs, mixed herbs, minced garlic, lemon zest, and a pinch of salt.
