- 4 chicken thighs or breasts
- 2 cups leeks, sliced
- 2 cups butternut squash, cubed

- 1 teaspoon thyme (optional)

Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the sliced leeks and cubed butternut squash.
- Place the chicken on top of the vegetables.
- Drizzle with olive oil and season with salt, pepper, thyme, and minced garlic.
- Toss the vegetables to coat them with the oil and seasonings.
