- 4 lamb chops
- 2 tablespoons fresh rosemary, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 large potatoes
- 4 tablespoons butter
- ½ cup milk
Instructions
- Preheat the oven to 400°F (200°C). Season the lamb chops generously with salt and pepper, then sprinkle with rosemary and garlic.
- Heat olive oil in a large skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until browned.
- Transfer the lamb chops to the oven and roast for about 10–15 minutes until medium-rare (135°F/57°C).
- Meanwhile, peel and chop the potatoes, boil until tender (about 15 minutes), then mash with butter, milk, salt, and pepper until creamy.
- Serve the lamb chops with mashed potatoes, garnished with a sprig of rosemary or parsley, and pair with a green salad or seasonal vegetables.
Notes
Let the lamb chops rest for a few minutes after roasting. For extra flavor, marinate the lamb chops before cooking. Don’t skip the salt in potato water for proper seasoning.
