Ingredients

  • 4 lamb chops
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 large potatoes
  • 4 tablespoons butter
  • ½ cup milk

Instructions

  1. Preheat the oven to 400°F (200°C). Season the lamb chops generously with salt and pepper, then sprinkle with rosemary and garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until browned.
  3. Transfer the lamb chops to the oven and roast for about 10–15 minutes until medium-rare (135°F/57°C).
  4. Meanwhile, peel and chop the potatoes, boil until tender (about 15 minutes), then mash with butter, milk, salt, and pepper until creamy.
  5. Serve the lamb chops with mashed potatoes, garnished with a sprig of rosemary or parsley, and pair with a green salad or seasonal vegetables.

Notes

Let the lamb chops rest for a few minutes after roasting. For extra flavor, marinate the lamb chops before cooking. Don’t skip the salt in potato water for proper seasoning.
