Description

A delightful dish that beautifully combines flaky pastry with tender salmon and zesty lemon-infused rice, perfect for any occasion.

Ingredients

Scale
  • 2 salmon fillets
  • 1 cup cooked rice
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 sheets of pastry
  • Fresh herbs (dill or parsley) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the cooked rice, lemon zest, lemon juice, olive oil, and season with salt and pepper. Stir well.
  3. Place a salmon fillet on a piece of pastry and top it with the rice mixture.
  4. Fold the pastry over the salmon, sealing the edges tightly to keep the juices inside.
  5. Repeat with the second fillet and place both parcels on a baking sheet. Bake for 20-25 minutes until golden brown and crispy.
  6. Serve hot, garnished with fresh herbs.

Notes

Use high-quality salmon fillets for the best flavor. Consider adding cream cheese or goat cheese for richness.
