A creamy and satisfying pasta dish featuring tender salmon, bright cherry tomatoes, and a velvety sauce.

- 8 oz pasta (spaghetti or penne)
- 2 salmon fillets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside. Pat the salmon fillets dry and season both sides with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add the seasoned salmon fillets and cook for about 4-5 minutes on each side until cooked through. Remove and let cool slightly, then flake into large pieces.
- In the same skillet, add minced garlic and halved cherry tomatoes. Sauté for about 3-4 minutes until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Add the cooked pasta and flaked salmon back to the skillet. Toss gently to coat in the sauce. Adjust seasoning with salt and pepper. Serve warm, garnished with fresh parsley.
Notes
Serve with a squeeze of lemon and a sprinkle of extra Parmesan. Store components separately for meal prep.
