- 1 pound sausage
- 1 bag (30 oz) frozen hash browns
- 1 cup shredded cheese (cheddar or your choice)
- 1 small onion, diced
- 4 large eggs
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- Optional toppings: green onions, sour cream
Instructions
- Heat 2 tablespoons olive oil or butter in a large skillet over medium heat. Dice the onion.
- Add the diced onion to the skillet and cook until translucent, about 3–4 minutes. Add the sausage and break it up with a spoon, cooking until browned, about 6–8 minutes.
- Stir in the frozen hash browns and cook, stirring occasionally, until heated through and crispy, about 10–15 minutes. Meanwhile, whisk together the eggs with salt and pepper.
- Push the hashbrowns and sausage to one side of the skillet. Pour the whisked eggs into the cleared side and gently scramble them until just set, about 2–3 minutes.
- Mix the scrambled eggs into the hashbrowns and sausage. Sprinkle the shredded cheese over the top and cover the skillet for about 1–2 minutes to melt the cheese.
- Serve hot with optional green onions and sour cream.
Notes
For extra crispiness, spread the hashbrowns in a single layer and avoid stirring too often. Substitute turkey sausage or plant-based sausage for a lower-fat or vegetarian option.
