- 1 lb Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 8 oz lasagna noodles, broken into pieces
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups spinach or kale
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Parmesan cheese for topping
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned; ensure to break it into smaller pieces. Drain excess fat.
- Add the diced onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
- Stir in crushed tomatoes, chicken broth, and dried seasonings. Bring to a boil, then reduce heat. Add lasagna noodles and cook until al dente.
- Stir in spinach or kale until wilted. Serve each bowl with ricotta, shredded mozzarella, and grated Parmesan cheese.
Notes
For a lighter version, try turkey or chicken sausage. Feel free to add other vegetables like zucchini, bell peppers, or mushrooms.
