Description

A comforting Sausage Lasagna Soup that combines the rich flavors of traditional lasagna with the convenience of a warm broth soup. Perfect for busy weeknights!


Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups spinach or kale
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Parmesan cheese for topping

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned; ensure to break it into smaller pieces. Drain excess fat.
  2. Add the diced onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
  3. Stir in crushed tomatoes, chicken broth, and dried seasonings. Bring to a boil, then reduce heat. Add lasagna noodles and cook until al dente.
  4. Stir in spinach or kale until wilted. Serve each bowl with ricotta, shredded mozzarella, and grated Parmesan cheese.

Notes

For a lighter version, try turkey or chicken sausage. Feel free to add other vegetables like zucchini, bell peppers, or mushrooms.
