- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 package puff pastry
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C). Peel and dice the sweet potatoes. Chop the onion and mince the garlic. Thaw puff pastry if frozen and beat the egg for egg wash.
- In a skillet over medium heat, add ground beef and cook until browned. Drain excess fat if needed. Add onion and garlic, and sauté until soft (3-4 minutes).
- Stir in sweet potatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Simmer covered until sweet potatoes are tender (12-15 minutes). Remove lid to thicken if necessary. Let cool slightly.
- Roll out puff pastry and cut into circles. Fill each circle with the meat mixture, fold over, and crimp edges to seal. Brush with egg wash and cut vents. Bake for 20-25 minutes until golden brown.
Notes
Serve warm; pairs well with salad or sour cream. Can be stored in the fridge for 3 days or frozen for up to 2 months.
