- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
- 1 (8 oz) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups marshmallows
- 1 cup chocolate chips
- 1/2 cup peanut butter
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan with butter or nonstick spray and line with parchment paper if desired.
- Mix the graham cracker crumbs, melted butter, and brown sugar until evenly moistened. Press into the bottom of the pan to form a crust.
- Beat the cream cheese, granulated sugar, and vanilla extract until smooth. Spread evenly over the crust.
- Top the cheesecake layer with marshmallows, sprinkle with chocolate chips, and add dollops of peanut butter. Bake for 25 minutes until marshmallows are puffed and golden.
- Cool completely before cutting into bars.
Notes
For neat slices, chill well before cutting. Serve with a dusting of cocoa or drizzle of melted chocolate.
