- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp garlic, minced
- 1/2 tsp ginger, grated
- 2 green onions, sliced
- Sesame seeds for garnish
- Vegetables of choice (e.g., bell peppers, carrots, cucumber)
Instructions
- Cook soba noodles according to package instructions. Once done, drain and rinse under cold water to stop cooking and remove excess starch.
- In a large mixing bowl, combine sesame oil, soy sauce, rice vinegar, honey or maple syrup, minced garlic, and grated ginger to create the dressing.
- Toss the cooked soba noodles with the prepared sauce until well-coated.
- Gently add your choice of sliced vegetables and green onions, mixing everything evenly.
- Serve the noodles cold, garnished with sesame seeds.
Notes
For added protein, consider pairing with grilled chicken, tofu, or shrimp. Customize with your favorite vegetables.
