Ingredients

- 3–4 rainbow carrots (or regular carrots)
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon honey
- Sesame seeds for garnish
- Salt and pepper to taste
- Fresh cilantro or parsley (optional)
Instructions
- Wash and peel the rainbow carrots. Use a mandoline or vegetable peeler to shave the carrots into thin ribbons.
- In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, salt, and pepper. Adjust to taste.
- In a large bowl, toss the shaved carrots with the dressing until well coated.
- Let the salad marinate for about 10 minutes and serve garnished with sesame seeds and chopped cilantro or parsley if desired.
Notes
Store in an airtight container in the refrigerator for up to 3 days. For extra crispness, store the dressing separately.
