Description

A flavorful and hearty sheet pan breakfast that combines eggs, veggies, and protein for a satisfying start to your day.


Ingredients

  • 8 large eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups diced potatoes
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper until well combined.
  3. On a large baking sheet, toss the diced potatoes with olive oil and season with salt and pepper. Spread evenly and roast in the oven for about 20 minutes.
  4. After 20 minutes, remove the baking sheet from the oven and add the bell peppers, onions, and cooked sausage or bacon.
  5. Pour the egg mixture over the potato and veggie layer, then sprinkle with cheese.
  6. Return the pan to the oven and bake for an additional 15-20 minutes, or until the eggs are set and the cheese is melted.
  7. Let cool slightly, garnish with fresh herbs if desired, slice, and serve hot!
