Quick and delicious Sheet Pan Chicken Pitas combining tender chicken with colorful veggies, served in warm pita bread.

- 2 chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- Salt and pepper to taste
- Pita bread
- Tzatziki sauce (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the sliced chicken, red bell pepper, yellow bell pepper, red onion, olive oil, garlic powder, paprika, salt, and pepper. Toss well until evenly coated.
- Spread the mixture evenly on a sheet pan and bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
- For warm pita, place pita bread in the oven for the last 5 minutes of cooking. Serve the chicken and vegetables in the warm pita bread. Top with tzatziki sauce and fresh parsley if desired.
Notes
Make sure to slice the chicken and vegetables evenly for uniform cooking. Feel free to customize the toppings and sauces.
