Description

This Sheet Pan Gnocchi is a dreamy, one-pan meal that is easy to make and perfect for busy weeknights. Roasted gnocchi, vegetables, and melty cheese create a comforting dish that is satisfying yet light.


Ingredients

  • 1 pound gnocchi
  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the gnocchi, cherry tomatoes, bell pepper, zucchini, olive oil, salt, pepper, and Italian seasoning. Toss until well coated.
  3. Spread the mixture in a single layer on a sheet pan and bake for 20 minutes, stirring halfway through.
  4. Remove from the oven, sprinkle shredded mozzarella cheese on top, and return to the oven for an additional 5 minutes, until the cheese is melted and bubbly. Garnish with fresh basil before serving.

Notes
