- 1 pound gnocchi
- 2 cups cherry tomatoes, halved
- 1 bell pepper, diced
- 1 zucchini, sliced
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the gnocchi, cherry tomatoes, bell pepper, zucchini, olive oil, salt, pepper, and Italian seasoning. Toss until well coated.
- Spread the mixture in a single layer on a sheet pan and bake for 20 minutes, stirring halfway through.
- Remove from the oven, sprinkle shredded mozzarella cheese on top, and return to the oven for an additional 5 minutes, until the cheese is melted and bubbly. Garnish with fresh basil before serving.
