Description

Delightful foil packs featuring shrimp, buttery corn, and seasoned potatoes for a flavor-packed meal with minimal cleanup.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ears of corn, cut into thirds
  • 23 potatoes, diced
  • 4 tablespoons butter
  • 2 tablespoons Old Bay seasoning
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Cut large pieces of aluminum foil, about 12×18 inches each.
  3. In the center of each foil piece, place a handful of diced potatoes and corn pieces.
  4. Add shrimp on top of the vegetables.
  5. Dot the mixture with butter and sprinkle with Old Bay seasoning, salt, and pepper.
  6. Place lemon slices on top.
  7. Fold the foil over to seal the packets tightly.
  8. Place the foil packs on the grill or in the oven and cook for about 20-25 minutes.
  9. Carefully open the foil packs, garnish with fresh parsley, and enjoy!

Notes

Use large shrimp for better texture; avoid overcrowding to ensure even cooking.
