Description

Delightful muffins inspired by traditional Simnel cake, perfect for Easter or any occasion.


Ingredients

  • 200g plain flour
  • 100g butter, softened
  • 150g sugar
  • 2 eggs
  • 100ml milk
  • 200g mixed dried fruit
  • 100g marzipan
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • A pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.
  2. Cream the softened butter and sugar together until light and fluffy. Beat in the eggs one at a time, adding a tablespoon of flour with each.
  3. Gently fold in the remaining flour, baking powder, mixed spice, and salt until just combined.
  4. Stir in the milk, mixed dried fruit, and diced marzipan until evenly distributed.
  5. Spoon the mixture into the muffin cases, filling them about two-thirds full. Bake for 20-25 minutes or until a skewer comes out clean.
  6. Allow to cool for a few minutes before transferring to a wire rack.
  7. Optionally, top with additional marzipan and give a light toast under the broiler before serving.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
