Delightful muffins inspired by traditional Simnel cake, perfect for Easter or any occasion.
Ingredients

- 200g plain flour
- 100g butter, softened
- 150g sugar
- 2 eggs
- 100ml milk
- 200g mixed dried fruit
- 100g marzipan
- 1 tsp baking powder
- 1 tsp mixed spice
- A pinch of salt
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.
- Cream the softened butter and sugar together until light and fluffy. Beat in the eggs one at a time, adding a tablespoon of flour with each.
- Gently fold in the remaining flour, baking powder, mixed spice, and salt until just combined.
- Stir in the milk, mixed dried fruit, and diced marzipan until evenly distributed.
- Spoon the mixture into the muffin cases, filling them about two-thirds full. Bake for 20-25 minutes or until a skewer comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
- Optionally, top with additional marzipan and give a light toast under the broiler before serving.
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
