- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup packed brown sugar
- 2 large eggs
- 1 cup milk
- 1 cup mixed dried fruit
- 1/2 cup chopped nuts
- 1/2 cup marzipan (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt. In another bowl, cream the butter and brown sugar until fluffy. Beat in the eggs one at a time, then add the milk.
- Gradually incorporate the dry ingredients into the wet mixture until combined. Fold in the dried fruit and nuts.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If using marzipan, shape it into a layer on top of the loaf in the last 10 minutes of baking. Allow to cool before slicing.
Notes
This loaf can be served warm or at room temperature and keeps well for up to 4 days at room temperature. It can also be frozen for up to 3 months.
