A quick and comforting single-serve s’mores cookie that captures the classic campfire treat in a handheld dessert form.

- 2 tablespoons graham cracker crumbs
- 1 tablespoon all-purpose flour
- 1 tablespoon brown sugar
- 1 tablespoon melted butter
- 1 to 2 tablespoons chocolate chips
- 1 marshmallow
Instructions
- Preheat your oven to 350°F (175°C). Choose a small oven-safe dish or ramekin about 3–4 inches across.
- In a small bowl, mix graham cracker crumbs, flour, brown sugar, and melted butter until combined and crumbly. Press the mixture firmly into the bottom of the ramekin to form an even base.
- Add 1 to 2 tablespoons of chocolate chips on top of the pressed crust. Place one marshmallow on top of the chocolate chips. Bake for about 8–10 minutes, or until the marshmallow is golden brown and the chocolate looks soft and melted.
- Allow the s’mores cookie to cool slightly for 2 minutes before eating. The marshmallow will be hot inside.
Notes
Serve warm straight from the ramekin. Add extra graham crumbs or chocolate drizzle for flair.
