Description

A hearty, comforting dish that combines seasoned meatballs, beans, and vegetables simmered in a rich chili sauce, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef or turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the chopped onion, minced garlic, and chopped bell pepper to the skillet. Sauté for about 3-5 minutes until softened and translucent.
  3. Add the ground beef (or turkey), breaking it apart with a spatula. Cook for 5-7 minutes until browned and fully cooked.
  4. Stir in the chili powder, cumin, salt, and pepper. Mix well and add the diced tomatoes and beans. Stir until well mixed and let simmer for 15-20 minutes.

Notes

Serve with toppings like shredded cheese, sour cream, or fresh cilantro. It pairs well with crusty bread or rice.
