Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 package (12 oz) stuffing mix
  • 1 cup chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and garlic powder. Place in a single layer in the slow cooker.
  2. In a medium bowl, combine the stuffing mix, chicken broth, cream of chicken soup, diced onion, and diced celery. Stir until evenly moistened.
  3. Pour the stuffing mixture over the seasoned chicken in the slow cooker. Cover and cook on LOW for 6–7 hours until the chicken reaches 165°F (74°C) and the stuffing is tender.
  4. Let rest for 5–10 minutes, then shred or slice the chicken and fold into the stuffing. Adjust seasoning if necessary and serve hot.

Notes

Use even-sized chicken breasts for uniform cooking. Avoid lifting the lid during cooking, as it adds to cook time.
