- 2 cups smoked chicken, shredded
- 1 cup green chiles, diced
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1 cup cheese (cheddar or Monterey Jack), shredded
- 1/4 cup cilantro, chopped
- 4 large flour tortillas
- 1/2 cup sour cream
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the smoked chicken, green chiles, cooked rice, black beans, cheese, cilantro, cumin, garlic powder, salt, and pepper. Stir until mixed well.
- Lay a tortilla on a flat surface and spoon 1/4 of the filling mixture into the center of the tortilla.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Make sure the filling is secured inside.
- Heat a skillet over medium heat and place the burritos seam side down. Cook until golden brown and heated through, about 3-4 minutes per side.
- Serve warm with sour cream on the side for a creamy dipping option.
