These Smores Gingerbread Cookie Bars combine warm gingerbread spice, crunchy graham flavor, gooey marshmallows, and melty chocolate into one easy tray bake.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1 cup mini marshmallows
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- Cream butter with brown and granulated sugars until fluffy. Beat in egg and vanilla. Gradually add dry ingredients and mix just until combined. Fold in graham cracker crumbs, chocolate chips, and mini marshmallows.
- Spread mixture evenly in prepared pan and smooth the top. Bake for 25–30 minutes until edges are golden and center is set. Cover with foil if marshmallows brown too quickly.
- Cool completely in the pan before lifting and cutting into 12 bars. Serve warm or at room temperature.
Notes
Serve warm with milk, hot cider, or coffee. Dust with powdered sugar or drizzle with melted chocolate for presentation.
