  • 1 cup brown sugar, packed
  • 1 egg
  • 1/2 cup unsulfured molasses
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. Cream together the softened butter and brown sugar until smooth and fluffy. Beat in the egg, molasses, and vanilla extract until well combined and creamy.
  3. Gradually mix the dry ingredients into the wet mixture until the dough comes together.
  4. Divide the dough into two disks, wrap each in plastic wrap, and refrigerate for at least 2 hours.
  5. Preheat your oven to 350°F (175°C). Roll out one disk of dough to about 1/4-inch thick, cut into shapes, and transfer to baking sheets.
  6. Bake for 8-10 minutes until the cookies are set but still soft in the middle. Let cool before decorating.
