A bright and crunchy salad featuring smoky flavored grilled chicken, fresh vegetables, and your favorite dressing.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • Your favorite salad dressing

Instructions

  1. In a small bowl, mix the olive oil, paprika, cumin, salt, and pepper. Rub this spice mixture all over the chicken breasts.
  2. In a large bowl, combine the salad greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion. Toss lightly.
  3. Preheat your grill to medium-high heat. Grill the chicken for 6–7 minutes on each side until the internal temperature reaches 165°F (74°C).
  4. Remove the chicken from the grill and let it rest for a few minutes. Slice the chicken thinly, top the salad with the sliced chicken, and drizzle with your favorite dressing.

Notes

Serve immediately for the best texture, and pair with crusty bread or will warm pita for a fuller meal.
