- 1 lb ground turkey sausage
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups non-alcoholic ale
- 1 bell pepper, chopped
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions
- Heat 1–2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and bell pepper to the hot oil and sauté until softened and fragrant, about 5–7 minutes.
- Stir in the minced garlic and cook for another minute until aromatic.
- Add the ground turkey sausage and break it apart; cook until browned, about 6–8 minutes.
- Stir in the chili powder, cumin, salt, and pepper.
- Add the diced tomatoes and both types of beans to the pot and mix well.
- Pour in the non-alcoholic ale and bring to a simmer, scraping browned bits from the bottom of the pot.
- Reduce heat and let simmer for 30 minutes, stirring occasionally.
- Serve hot with your favorite toppings.
