  • 1 cup fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat the oven to 375°F (190°C). Chop the spinach finely and mince the garlic.
  2. In a large bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, pepper, and Italian seasoning. Mix gently but thoroughly.
  3. Form the mixture into meatballs about 1 inch in diameter. Heat the olive oil in a skillet over medium heat. Brown the meatballs on all sides.
  4. Transfer the browned meatballs to a baking dish and bake for 15–20 minutes or until cooked through (internal temperature should reach 160°F / 71°C).

Notes
