Description
Festive, buttery chocolate chip cookie bars that are easy to make and perfect for St. Patrick’s Day. Soft in the middle with a crisp top and pockets of melted chocolate.

- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- Green food coloring (optional)
- Sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan well, or line it with parchment paper and leave an overhang for easy removal.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Whisk together the all-purpose flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips and, if using, add green food coloring. Spread the dough evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick comes out with a few moist crumbs.
- Remove from the oven and let cool completely in the pan on a wire rack. Cut into 12 bars.
Notes
Serve with a dusting of powdered sugar or extra sprinkles for a festive look. Pairs well with milk, coffee, or ice cream.
