St. Patrick’s Day Chocolate Chip Cookie Bars

Description

Festive, buttery chocolate chip cookie bars that are easy to make and perfect for St. Patrick’s Day. Soft in the middle with a crisp top and pockets of melted chocolate.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • Green food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan well, or line it with parchment paper and leave an overhang for easy removal.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Whisk together the all-purpose flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Fold in the chocolate chips and, if using, add green food coloring. Spread the dough evenly into the prepared baking pan.
  5. Bake for 25-30 minutes, or until the top is golden brown and a toothpick comes out with a few moist crumbs.
  6. Remove from the oven and let cool completely in the pan on a wire rack. Cut into 12 bars.

Notes

Serve with a dusting of powdered sugar or extra sprinkles for a festive look. Pairs well with milk, coffee, or ice cream.
